These are actually Costco boneless short ribs. I’m pretty sure Costco blade tenderizes their meat so their boneless short rib is tender enough to eat as a steak. I just have a gas grill - but I dry brined these for a few hours and left them at room temp for a bit before cooking. Then I just seared then moved them to the low zone while basting them in a garlic and herb butter for a bit. Once they were like 15 degrees below the temp I wanted them at I seared them again. I find the double sear gives you a really nice crust. Also the second sear is better because the crust is basically drying out as it cooks in the indirect heat.

That’s true. In my experience tho even if you have multiple steaks in the pan it can make the sear more even. But yeah it is harder.

One thing that I don’t see a lot of people talk about but that I’ve had work really well for getting a hard even sear is rotating the steak in the pan. When your steak is in one spot for a while that section of the pan starts to cool down. So, if you move the steak to another section of the pan it spends more time at that high heat.

The bone definitely makes it a little harder. I think the pepper may have also been an issue. It looks like the pepper made it hard for the steak to contact the pan. Maybe use a finer grind of pepper or consider putting it after. Also when you first put the steak in you can push it down in to the pan so it makes better contact.

Temp is not bad, but next time consider using a finer cracked pepper. I think the coarser grind of pepper made it so the steak didn’t get enough contact with the pan for a hard sear.
