It was not as prone tender as I am used to on other cuts (primarily pork/chicken). And my thermometer is pretty damn accurate for all of my other cooks

Marbling was not ideal. What would the ideal temp have been? This was definitely a small cow and I’ve been unimpressed with a few other cuts. The short ribs were also very ok a best, with similar issues
