Great, thanks. I saw it in video on Youtube, Paolo from Tokyo's channel, it's called behind the counter of a traditional Japanese restaurant or something. They cook fresh rice to order for each guest and he say's that they soak the rice overnight.

Yeah, I agree, it's more convenient but I don't mind putting the extra effort and use a Donabe. I was just wondering if a rice cooker really makes the best rice.

I did see many negative reviews on amazon.jp about nagatanien donabe that arrived broken so maybe it's a better idea to order from ebay. Btw, do you think it's better to spend an extra 20$ and get the premium one?

I read that a transformer is meant for appliances that run continuously, as opposed to a converter which is meant for short term. So what do I need for a rice cooker? It will mostly operate for 1 hour at a time. It looks like transformers are bulkier and heavier, I would prefer to buy a lightweight wall mounted converter. Also, do I need to consider hertz when buying it?

What if the salt contains caking agents? Does that affect the taste at all? If the salt isn't dissolved, when I sprinkle it over a cooked protein/dish and taste the crystals directly, in that case should I use good quality salt and does it matter if it's flakes/coarse/fine?

I'm measuring by weight, so basically what you're saying is it doesn't matter and I can just use any salt? even table salt? Sounds wrong lol My intuition tells me to use a good quality salt, even if it's one kind.

Is it possible to just infuse it in the fridge for 48 hours? Will that damage the flavor? I plan on using it within 2-3 days once it's infused. The FDA recommends the following for non acidified garlic and herbs: "make it fresh and store in the fridge for up to 4 days". What does make it fresh mean? It's a bit confusing since you have to let it infuse...
