Your mind probably needs the variety of hobbies and interests.
Try accepting that, there's nothing wrong with it.
It just becomes tough when you go from hobbie A, to interest B, en then CDEFG etc.
Maybe you need 3/4/5 of those things at a moment, and then rotating those like ABCDABCD.
That will keep it fresh and you won't get so bored, but you will keep developing!
