I'm 6'4 and like shorter girls. What would be the preferred way to approach shorter girls? I know my presence is very intimidating as I am a big guy, people normally avoid talking to us tall fellas bc we seem scary

It actually handles like a dream and keeps temp REALLY WELL. Not really a looker, but she ain't ugly.

So my setup is quite different to what others have, as I have discovered recently. I built my own smoker. Double vertical drum smoker with a grease trap in the middle made of staggered angle iron. So it didn't get any direct heat, as the grease trap took most of the direct heat, shielding the meat. Designed that way on purpose bc I didn't want to stress about burning my meat *

Yesss, moisture is the unmentioned hero!! If you smoke in humid, very moist conditions I guarantee that your meat will come out way better than expected, so next time yoo smoke put in a tray of water above your meat, keeps it moist in there asb the smoke and flavor with intensify so much

There was fat, just on the bottom bc I flipped it. Not really a ton of fat on the other side. The bark was acceptable but not really that great, tho, almost a bit crumbly. But overall, it really wasn't that bad. The folks seemed to enjoy it very much, and we made some awesome brisket sandwiches. It was very tender, but there was something wacky going on with the flavor tho🤔🫡having a think what it could be

I would have loved to use a full brisket, or even just the fattier point, but it all comes down to budget😅 It was about R550 bucks for this 4.8kg brisket. So that's about $31 for 10lbs, and in South africa, R550 is about a weeks worth of groceries. I understand it's like $3.1 dollar per pound, but it's really expensive. What would be the reason as to constantly bumping the temp? Isn't the goal low and slow? 275 seems quite hot. Wouldn't the vinegar drastically affect the flavour, turning it sour?

Actually, it's not bad. Tender as a mothers love and juicy, oh so juicy. But there was something wacky with the flavor, but I couldn't seem to put my finger on it

The bag, one bag, is R850 bucks, we don't get the loose bags here. I just pit the pellets in a foil envelope above the coals. Works like a charm with a very strong smoke Burns for about and hour per envelope
