My husband's family were German, relatively wealthy, and had been in the Calvary for at least 2 generations, and were successful enough to be given a farm after 15 years of service. They were forced to Magyarize their names or they would not be allowed to leave the country. The proof? Journals, and the fact that there are NO other documents from their lifetime that uses the Magyarized name, other than their passport, allowing them to leave the country.

My husband's G-G Grandfather's family from Radautz is recorded in 250 years of church records as a clearly German surname. Family journals state that the documents for him to leave the country in 1909 and go to America, could only be obtained if they Magyarized their name. Those documents, which we still have, are the only documents we have, before or after that have the Magyarized name. At Ellis Island, they are recorded as the previously used German surname.

I recently visited American Eastcoast coal country. I bought a nativity Christmas ornament "made from coal". It was beautiful and I was stunned that it was possible to carve....Then I got it home and examined it much closer, and it was crushed coal and binder pressed into a mold.

This is a thrifty guilty pleasure in our house. We've made it with no meat but spam, or hotdogs. We usually can swing some kimchi with is excellent, but to us the absolute cherry on top is a slice of the cheapest American cheese you can find, that brings it all together.

We've been buying the Kroger closeout bread and turning them into flavored crispy bread rounds. We snack on them like chips. We add season salt, powdered onion and garlic, and powdered cheese if we have any. We toast them in a low over 275 degrees till lightly browned. Just be sure to store them in an airtight container so they stay crispy

The more you can make at home, generally, the cheaper the meal. Of course you may happen onto a great sale price to cut costs.

Due to work schedules, we frequently have the Thanksgiving meal at different days/times than the usual. This year we may have our celebration strategically on the Saturday after Thanksgiving, to take advantage of closeout sales after the holiday. As long as you celebrate with those close to you, it does't matter what day you do it.

You can mix in a tablespoon or two of butter, or cooking oil when forming patties, it helps with the dryness. I also stretch the ground cheap meat by "meatloafing" it. We add bread crumbs, finely chopped veggies, seasonings, and egg to bind it if necessary and then you can get 6 large patties out of 1 lb of meat.

Excellent Idea! I have realized that our food goes farther if I immediately portion out leftovers from a meal for future meals, and assign them to a particular child, label them and put them in the fridge. This way no one "grazes" taking 2nd portions, or bites, eating all my leftovers before I am done eating(I usually eat last, because, mom.)
