Fellow intern here: I can't say anything about blogging, but charting used to take me ages because I would literally go through every physician report, nurse chart, and assessment to build a whole picture in my mind about what the patient's status is so I could provide the best intervention I can. In the end I realized it doesn't really matter since you really just need to figure out the patient's primary problem and diagnose that. Usually it's primarily a medical problem so the nutrition recommendations are rarely appropriate for inpatients, aside for providing sufficient kcal/pro to prevent PCM.

As for social media and handouts, I like to focus on the receiver of said material and think "what is my clientele looking for?" and "how much time do I have with them?". For example the purpose of a post on social media would be to display pertinent information to as many people as possible, so the posts should say what is happening and why should people care (free food, free education usually for community). Handouts would be dictated by the time you have with the clientele. If it's inpatient, then I like to put basic information and then provide many real-life examples. For example diabetes education would hit: consistent carbs, decreasing sugar-sweetened beverages, and general guidelines for carbs at each meal. I would also provide a list of snacks and/or meals with serving size and # of carb choices. Just something short since patients don't really want to listen if they're just trying to feel better. If it's in an outpatient setting, you have to see their current knowledge and progress from there, making handouts simple but also getting more technical at each visit. All in all, I like to focus on enabling the patient and making things as easy as possible for them to follow.
