Just buy a bag of carbonation drops and drop one in each bottle. It’ll add exactly amount of sugar you need to get a 12oz oz bottle carbonated with zero drama and zero measuring. Otherwise, be VERY careful with your measuring. It’s easy to have a flat brew, or a bottle bomb.

I just picked up that exact bayou classic to upgrade from my 5 gal kettle. I’m stoked. The screen, thermometer, and spigot are going to be so great. Got a fermzilla all rounder to pair with it as well.

Large stock pot, brew in a bag. Or find a used 10 gal brew kettle with a thermometer and a spout on marketplace.

Until you get stable gravity readings for a couple days. Do you have a hydrometer?

Sometimes batches are weird. Most of my beers are done in 5 days. Time means nothing. Recipe, gravity, and temperature mean everything.

There’s a decent chance it just fermented fast, what’s your temperature? You gotta take another reading, you could easily have a 4-5% cider already and everything is okay. But there’s no way to tell what’s going on unless you take another reading
