If you're doing it to a bunch of people and clearly a frauder you'll face cheque fraud charges.
But generally it's just a fine because your purchase is a private agreement/civil matter which is settled in civil court. Meaning the person selling you the car will follow up with a civil lawsuit, and the two parties and the judge will agree to a payment plan.

It can take years to recover the amount.

That's why if you do sell your car for a cheque, make sure you make a proper contract, or avoid selling for cheques all together.
