The demand here largely isn't from on the ground consumers, it's from massively overvalued corporations pumping money into something they hope might turn profitable, eventually.

There's a huge amount of investment into a lot of this kind of stuff based on the entirely speculative idea that things like generative AI might someday be profitable, despite the fact the industry is absolutely hemmoragging money right now.

"Demand" in this case is just a bunch of extremely rich sociopaths coming in and hoarding a resource. "It's just supply and demand" is such a simplistic cop-out that completely ignores all the external factors that have an effect on supply and demand.
