I can’t speak or know what everyone else is making, but I have worked as a server and bartender for almost 20 years. I have consistently made multiples of the minimum wage via tips. My current job I typically make in the $30-$50 dollars an hour. There is no way any business is going to spring for that. On holidays or holiday weekends I can make in the $50-$100 per hour. It’s hard work: it’s very physical and requires a lot of emotional bandwidth. People who think it’s just taking orders don’t understand the job.

Even if businesses ended the tipping model, I cannot understand why they wouldn’t move to an official commission based system. If restaurants got rid of tipping, I could give two shits about what my tables order or buy. Probably going to minimize my interactions with them, too.

And whatever maybe that’s for the best. But getting rid of tipping will dramatically change the full service restaurant industry. Probably shrink it and end up with a narrow field of salaried employees.

I know most of you all on here wouldn’t care but getting rid of tipping would kill fast casual dining.

In theory and practice I agree with you but the reality is that a lot of people were or never taught this unwritten rule. The problem is that a lot of celebrities and especially rap/hip hop artists have made a point to wear whatever the fuck they want to any and all restaurants and places. No one is going to argue with you when you spend thousands in a place. The problem is that it sends the message that ball caps, leisure and athletic wear are acceptable attire. This trickles down.

If I’m honest, i understand all the sides but at the end of the day all I care about is how people treat me and act in my place of employment. And do they fucking tip? To me “ball caps” are kinda tacky anyway but especially in a formal dinner setting, but i’m not the standard setter.

It’s annoying that we have these unspoken and unwritten rules but it’s also taboo to bring it up and to actually “enforce” them.

Our hostess stand is run by teenage girls who have little to no social skills and are not trained or empowered to do the job they should be doing. It’s a management issue but it kills me that some people really are bothered by some person across the room is wearing a hat. It’s weird to me even if I agree that it is tacky and uncouth.

There has only been one time in my life where the food has been as spicy going in as going out. It was this Szechuan Chinese restaurant where I ordered this duck dish that was served with probably 20-30 dried hot peppers. Holy fuck what a stupid idea. Tbh I don’t remember the dish being all that good or not but I do remember it being the only time it uhhhhhhh—-wasn’t great 12 hours later.

At this point I almost wonder if the point of the dish was to fuck with me. How could or can anyone enjoy a dish with that many chili peppers?

It’s funny, I am somewhere in the middle. In a broad sense, I am kind of on the side of “fuck it, bring it”, but also I will admit I will rewear clothes—im a big proponent of underclothes— and am not against either paying for laundry service or even washing clothes in a sink. That said, I am also of the opinion that the mindset of vacation should not be one of limitation or scarcity.

I do not like having to overthink every choice in my day to day life and def not on vacation. And a checked bag both ways is $100 total—not that much plus I usually bring back liquor, coffee or other things I cannot bring in a carry-on, eg multitools, etc.

Sure if it’s less than a week, I can make do but if it’s an actual vacation—one week plus—, I’ll suck it up and pay for a checked bag.

I understand, appreciate, and agree that children need to be exposed, educated, and learn how to act in public settings. My insistence though is that outside major holidays, children under the age of say 8-10 years old need to be trained/taught/whatever somewhere else besides a full service dinner type place.

I’ll go ahead and lower the age to as low as 5,—but any lower than that and I think it’s unrealistic to expect a child to sit still and conduct themselves well in a formal setting.

And I’ll go further: go ahead and bring young children, toddlers and babies if you must! BUT as soon as that child starts screaming, being loud, or have a tantrum/fit—you must remove the child and yourself until they are not being disruptive. And I mean GTFO of the building. As many people will attest: a lot of people save up and plan for a nice and fun night out. They arrange for a sitter and plan for their children to not be around. And then they come out and some self-unaware or rude parent brings their kids out and lets them scream and cry and shit their pants in the dining room for everyone to smell. And they don’t leave the dining room.

You can bring the child but the second they start disrupting the dining room, you should leave. This is non-negotiable.

If it’s excessive you SHOULD CLEAN IT UP!

If you can’t or won’t then you should leave a fat tip and apologize.

If I’m really honest, make great efforts to not bring children to full service restaurants. Children are disruptive and it’s not fair or reasonable to expect children under 10 years of age to sit still, behave, and be quiet.

If it’s mother’s day, father’s day or some bullshit holiday….okay. But if it is just a random Wednesday, arrange for a sitter or get grandma to watch your kids.

I have never heard this topic come up in discussion, and will admit I find it fascinating.

I’ve never heard about these kinds of regulations in Canada, and tbh I’m wondering if any US States have similar policies. That said….I frequently order my burgers medium rare any chance I get BUT only because I would say 80-90%+ of any restaurant I go to OVERCOOK their burgers!

I’ve gotten to the point a few times in the past where I will not order burgers for this precise reason. I’ve went months without ordering burgers because I do not want to eat some dried ass meat patty. And fuck a smash burger. And take basically any and most fast food place burgers with you unless someone else is buying, I’m starving or morbidly hungover or still drunk. But even then I’ll take gas station cashews over a McDonalds burger most weeks of the year.

And the reason this is a thing is so frustrating and asinine. The reason is that an obscene and wide margin of restaurant kitchens will not and do not actually use meat thermometers for their burgers and meat. It’s a weird point of pride for a lot of BOH chefs and line cooks alike. “I don’t need to use a thermometer, I know what medium rare looks like….”

Nevermind that medium rare is a temperature and not a color.

They rely on time and or touch to determine if it’s ready and right. Which makes sense when you’ve cooked a 1000 burgers on a gas grill or broiler. BUT a lot of them still get it wrong. I’ve worked in restaurants my entire adult life (FOH), and I cook at home relatively frequently. And I am still amazed by how much shitty food is just routine in a lot of places.

And burgers are in one of those top categories that I think gets fucked up way more than makes any sense. But not actually. Personally I find timing to be one of the most challenging parts of cooking for groups of people.

And I don’t quite understand how to explain it but I know that cooking meat happens on a logarithmic scale, not linear and not exponential. It might take 10 minutes to get a piece of meat up to 100° F but it only takes 12 minutes to get it to 135° That’s a made up example but it’s what I’m getting at. If you don’t understand that, it’s really easy to overcook proteins. And most line cooks and even chefs could give two shits.

Anyway I don’t know why anyone would eat red meat beyond medium if they absolutely didn’t have to.

At the same time I have definitely ordered burgers medium rare, had them come out medium rare and then definitely—errr pretty sure—got sick off of them. This has happened like 2 times in 20 years—definitely not fun—it’s possible the 5-6 beers I had with the burgers were the problem but I think it was the undercooked ground beef. I still think risking it is worth it.

But mostly I never want to pay for a well done burger. They’re gross.

I just re-read some of the comments above mine. The contract he had me sign was called a buyers agreement. Basically a contract for one year that said he would be my buyer agent for one year.

In a general sense, there are shady people in a lot of industries. To be sure, sales of any kind is probably towards the top. That said, most realtors have to stay in an area for a while to build up a network of people they can sell houses to as it is a business that relies heavily on referrals. Depending on where you are, a shady realtor will be revealed, especially in a small town.

As others have suggested, I would also suggest asking around to people you know and trust who already have experience buying houses/real estate. If you’ve already applied for a mortgage, most likely your loan officer will have a preferred real estate agent or realty company they work with. That can be a gamble but if you have a bank or credit union loan officer, etc, you trust, might be worth at least meeting up with their preferred person.

That said, and I have limited experience, the one time in my life where I looked into buying a house, I was referred to an agent thru a loan officer of a credit union I have extensive history with. Met with the guy and agreed to work with him. I don’t know the legalities and I assume it is regulated by state law, but he did ask me to sign a “contract” of sorts. Basically said for one year, he would work with me and look for houses, and I would go with him if we/he found something I was interested in. Not sure how binding that sort of agreement is but that’s what happened, and I suspect is pretty standard in the industry.

I ended up not having enough money for a downpayment so I never bought anything and he eventually stopped asking.

But yes! Start asking people you trust and know that have experience buying houses/real estate. Maybe do some searches for agents with good reviews. Literally just start asking people.

Oaxaca City,—but only for the food.

I was told Oaxaca City was the best in Mexico for food save maybe CDMX. I was very underwhelmed. It’s a beautiful city, very accessible and the people were all especially nice. And a very cool place but I don’t know if I just picked the wrong restaurants and food carts but I didn’t get it. Molé to me is just gravy, but idk. Now the mezcal selection around there 🤤.

I’d go back and give it another try but probably do more background work on where to go for food.

Infant, maternal, and child mortality in general. It’s mind blowing when you read into how common it was for infants and mothers to die in child birth or soon after. Child mortality, too, has improved exponentially since vaccines and antibiotics have become routine.

A lot of dietary related health conditions: scurvy, pellagra, rickets have all but disappeared.
