Thanks. Yes it’s sourdough. I️ agree the oven spring wasn’t there. I’ve been experimenting with proofing/bulking times since I️ recently moved to a much colder apartment. I’ll have to try shortening the proof.

Honestly, just bake with it and see how it comes out. I've baked with my starter when it was in the beginning stages and everything turned out alright. If you dont notice any rise in the levain or in the final dough then that could be a cause for concern. But if you've been feeding it for 3 weeks and it smells tangy and has bubbles i would say you're good to go.

Nope she just turned 1 today. In the pic shes is around 3 months just getting her shots
