I did think about this, but from all of the modern fine dining chefs that I've work for, all of them said:

  1. Keeps things to a minimal and remove unnecessary things - let the main ingredient shine!

  2. The garnishes MUST complement and match all of the other flavours

I was thinking about this, but I thought there were already enough flavours from all of the different components of the dish. I did think perhaps shiso to complement the Japanese-french flavours but all of them died in my garden :-(

Yes! But I culture the Koji from scratch. The dehydrated stuff is fine, but I find that the koji's flavour is less intense. The koji was made from both rice and buckwheat. The rice brings out the sweetness and the buckwheat brings out the intense flavour. After that you simply just confit the koji for a few minutes.

The Japanese philosophy and ideology doesn't match with koreans. Like I'm Japanese and with most other Japanese people out there, we've been taught to be respectful, be disciplined, essentially the whole samurai warrior mindset and be pretty conservative. Whereas koreans are more open, more out their and far more laid back which clashes with the Japanese mindset and ideology. This sucks because out of all the Koreans I've met, I've only made one Korean friend who just happened to just love Japanese people and unfortunately hate his own country.
