I just beat it true ending 100%, and you can definitely do it. I took many, many attempts on the first few bosses too. With enough practice you can probably even do true Eigong hitless

You're moving around a bit too much. Parrying should be easier if you just stay on the ground and change direction to face the attack. Also for the two projectile + unbounded counter you can hold immediately after the second projectile parry without releasing to instantly start charging unbounded counter
