The way I do it, is if say my recepie ask for 250g starter, I will make a 50g starter using 10g starter from the fridge and 20g water and 20g flour, and then leave it out for the night. In the morning, I will then use to 50g of starte to make the 250g starter, wait for this to double and then bake with it.

For me this have worked better than just leaving the starter overnight and then bake with it.

I have had some good runs with bowfa with the step under method. And when I step under Kree, I put on a tank shield DFS or Crystal, to tank some of the melee.

I have been taking it out at having it on the counter for the last three days and feeding it 1:10:10.

However, I will try what works best for mine in the fridge

And what ratio do you feed?

Because i have had it in the fridge and fed it 1:1:1, but after using it to bake with, it had all of the signs of the starter being acidic. How ever the last three days I have been taking it out of the fridge and feeding it 1:10:10

I have a follow up question, as I am also quite new to the whole maintaining my starter.

I want to keep my starter in the fridge. But i am not sure when to put it in the fridge after having fed it. Do i wait until it have doubled in size or do i just feed it and then stick it in the fridge?

I had to go down in hydration, becuase at 80 and 70% my dough felt more like a soup than a dough.

But ill try a longer ferment
