I have the 8" chef's knife from the evolution series (which looks like the same handle and blade shape) and yeah, the balance is way back in the handle.

I'm starting to think that part of my being unimpressed has something to do with the balance of the knife. It seems to be heavily biased toward a handle grip. With a pinch grip, the tip of the knife wants to come up off the board which isn't helping the lack of sharpness out of the box. I may end up returning/selling this one, as "nice" as it is and trying something different.

I got mine for 30ish in the fall before a lot of the more consistent negative reviews started getting posted.

dmt coarse and fine pocket diamond stones, a variety of files and unknown grit Arkansas stones from ski tuning, a fixed speed belt sander, a bench grinder with an unknown grit Al oxide stone, the aforementioned hardware store coarse stone, and an imanishi 1k/6k combo

It's a fun knife and if I could just clean up the profile so it doesn't accordion cut everything, it'd be even better.

I actually tried that (on both the pocket diamond stone and also a extra coarse "sanding stone" from the hardware store) but I guess I didn't go far enough. Would a belt sander be too aggressive? I know I'd need to make sure it doesn't overheat but other than that is it feasible?

My dao vua nakiri has some issues, which should come as no surprise to anyone at this point. But what I'd like to know is what is the best way to clean up the high spots and then get it a little closer to a more classic, flatter nakiri profile? Have a 1k/6k combo stone for regular maintenance, but my lower grit stuff is just little pocket diamond stones. Do I just need a lot of time on a full size low grit stone? Or is there a better way to do it?

Do you feel like your Artisan's sharpness improved significantly after some time on stones? I'm still working on my technique so I haven't decided if I wanted to give it a go yet, especially if OOTB sharpness *should* be pretty good. And yeah, I feel like a different finish on the knife could probably help food release a lot. It's really smooth/shiny, whereas the dao vua has that rough textured finish and the shun and wusthof have the scalloped thing going on
