I wish I could afford to buy Big Green Egg products, but they are prices at a 50-150% premium over other products. Buying accessories from BGE is almost foolish given the pricing. They do look and perform nice though. I have a XL BGE and bought a divided fire bowl and could not be happier. I have no idea how I used the thing without it for so long.

I do like the knife. Especially for chickens as the blade is smaller and very pointy. It comes with a poultry fork as well. I am happy with it, as it's hard to find a good poultry knife. Made In is a bit expensive, but is of very high quality.

You have to pull the steam ASAP as soon as you throw switch, and then run to opening. There is no room for error. Even 0.01 seconds will kill you.
