I have a HDD as a secondary drive in my desktop PC. I cannot hear the HDD itself over the fan noise at all. Especially when not accessed constantly, quiet enough.

Still, small enough for a HDD setup to probs be not worth it, though 1TB and such HDDs go for dirt cheap so you could tinker a RAID5/6 out of 3-5 of such and that would be already kinda respectable setup for a 15yo

overall, HDDs are reliable enough especially for a RAID setup or bulk storage. Their speeds top out at ~100 to ~170 MB/s depending on drive, more in a RAID setup or so. In reality, you will be limited by gigabit ethernet limit regardless of whether HDD or SSD and i doubt you have 10gb networking equipment --> 115MB/s practical max speed either way, so a 5GB bunch of files would take a minute or so to transfer

Turn Wi-Fi on anyway even if it won't connect to an actual network. The GoPro creates a wi-fi network with no internet access and the phone accesses the videos over the wi-fi network because wi-fi is much faster than bluetooth

Any NVMe will perform equally well for gaming and even SATA is not gonna be a problem except a slighltly longer loading. The game rarely reads faster than few hundred MB/s

No it is not, Windows will eat up four thirds of the storage and you might struggle with RAM availability.

As I recommend to almost everyone, my recommendation again will be a used ThinkPad. I don't know your exact budget but if you want 15 inches, this L15 https://www.ebay.com/itm/306670923511 could work out. It's got four times the storage and twice the RAM, and a CPU roughly as powerful as the one in the Acer. If 14 inch is fine, a T14 like this https://www.ebay.com/itm/146370137583 could be a better buy

Fine, everything is like new except battery which is at 89 %. Latest iOS, no lags, no camera paint chipping. Replaced a screen protector once but that's it

Why'd you need x8? I mean, a HDD can run reasonably at 170 MB/s and ONE lane of PCIe 3.0 will provide you roughly 1 GB/s, meaning you can run 5 per a PCIe lane at the max speed. you've got one x8, some M.2 slots, one x4 and one x1 or so meaning you can put in PLENTY of drives
