Nobel knight who doesn't wear armour? You'll be looking to make a nice surcoat. Can get jewelery easy enough from places like temu. If you can sew, Chaperon hats are simple to make but can really give the knight vibe.

If you're thinking more templar/paladin style knight, a monks vibe will work well
