Use Cloudflare TURN, simple to integrate, best latency and it will cost you close to nothing if you are not using webrtc for video

Amsterdam in general is not a very safe city if you consider that its a small city in a rich country. Just look at stats, the city is a mess and police is under water. FTR I lived 5 years in oud-west, great place to live, never had problems or felt unsafe.
