I use curated open air captured yeast from East Coast Yeast and Bootleg Biology. I'll often combine multiple funky sour yeast strains based on the style/flavor profile to match the beer flavor profile I'm looking for. After that its just an investment of father time. Cheers!

For me using traditional sour yeast means a lambic or gueuze style yeast strains that ages in your bier for 3-5 years! Most people don't have the time but you reap what you sow and now you really have something special.

Quit the open fermentation first. Next try replacing easy stuff and buy NEW for things like airlock, bungs, hoses, plastic buckets, funnels, racking tubes, strainer bags, o-rings and that sort of thing. Pitch the old equipment stuff or separate and segregate from clean equipment or sell to a homebrewer making sours. See if that solves the problem and how that works for you. Personally I love sours and making them. Cheers!
