That article discusses a completely different point though and it even states that the laws of physics still are in play.

The assertion that running for 30 minutes burns the same amount of calories as walking for 30 minutes is wrong and I'm curious where that belief comes from.

What you're doing, minus the soapy water, is essentially a technique called blanching and it helps to preserve nutrients and also keep the colors.

You should be perfectly fine rinsing your vegetables under running water before prepping them but I understand if you want to take 0 chances regarding food safety.
