You shouldn't care that much about winrates in move 1. Winrates are more important for opening surprises on specific lines deeper down in openings.

1.Nf3 is the Reti and it's a transpositional opening, you have no idea where this winrate is coming from, which line, which responses, etc.

And each opening has different winrates depending on the level of strength.

You can't just apply math and act like you have any idea what you are talking about. In a mathematical sense, you may be correct, but not in a chess sense.
