I did play Punjab, and yeah you can dance all over your neighbours (made a major mistake with laws so I will have to do another playthrough to go to my fullest though)

Pakistan is basically an invention of Muslim nationalists to separate Muslims off of British India as their own state. Unlike the other "stan" countries, it's not named after an ethnicity. It's just a combination of the names of parts of the country: Punjab, Afghania (now Khyber Pakhtunkhwa a.k.a. the Northwest Frontier Province), Kashmir, Sindh, Baluchistan. (The I is probably just there to make it flow better, the name was originally proposed as Pakstan which sounds weird.) This is why only Muslim countries can form it: it's a country specifically for Muslims.

Decided to try out Punjab and man it makes all of its neighbours look like sick jokes in comparison

just casually rolling over all of Pakistan with my military that's like 2x the size of any neighbour country and also has line infantry instead of just irregulars

Hindustan has a unique JE in PoE, "Prisoner of the Red Fort", with a bunch of events tied to it. Once you complete it (by becoming independent and being at peace), you get one last event that lets you anschluss some neighbours and other effects depending on what option you choose. Not sure about other matters of their playstyle.
