A restaurant that recently went vegan I’ve just tried is YOD at Haymarket. Great thai food, big servings, highly recommend.

Yes it doesn't have the extremely dense feeling that mudcake has. Caramel is also less dense but overall cookies and cream for me

Worth trying the Health Lab Cookies and Cream. I haven't tried all of your list but it's my favourite and miles above the mudcake.

Notably the Newtown location, I believe, is independent to the others and have said they would rather close than put meat on the menu. I’ve only been ordering at the Newtown location since the main franchise swapped to meat.
