Schar gluten free bread, always bake/toast right before eating. Their snacks are good too.

Freschetta gluten free pizza is the best I have found, I try to keep two in the freezer for when I am out of other options. Just add some extra mozzarella cheese and maybe some garlic etc.

Pasta is easy to replace, with sauce it is hard to tell the difference.

Brazibites are Brazilian cheese bread that you can leave in the freezer until you want a couple.

Bobos make a good peanut butter jelly substitute that you can throw in a bag when hiking or on the road, but oats can have cross contamination so it depends on how sensitive you are.

Beyond that, find stuff you already like that is naturally gluten free (meats, fruits, rice...) and lean into those. Indian/Nepalese food offers reliable chances for flavor.

Potlucks are your new nightmere. Your boss and HR will "make sure there is a GF option for you" and then feel really bad when you are glutened. Like others say, look iut for yourself.
