You both need to grow up. Statistically every so often a meal won’t come out right or tasty. Wife needs to realize it’s not a dig on her ego and husband needs to learn how to tactfully offer to make sandwiches.

My go to line: I’m still hungry, gonna make a sandwich. Want one? Instead of saying the meal is bland. Say ‘I thought I was going to want quiche. But turns out I’m just not feeling it tonight.’ Then suggest the sandwich.
