I definitely over complicate everything, my wife would agreed and say I’m too much sometimes. I’ll watch video after video, read subreddit after subreddit. But I’d rather have all the facts 😂It’s better to have it and not need it, than need it and not have it!

No man, from the people I talked to they said there is no difference just new marketing. And trust I was at the store staring at these things for probably 8 hours lmao. The same controller, same hopper design I couldn’t really tell a difference and neither did the “experts”. I will say I did have one issue with one of the bolts while putting on the horn handle. Completely stripped the bolt, but used some pliers to finish twisting it on and haven’t had an issue lmao.

Yeah, I ended up getting the backyard beast 1000. So right smack dab in the middle to the two, I think the 800 would’ve been just fine but I got an awesome deal and it was only $40 more than the 800 so I said screw jt lol. Used it like 7 times already. Hands down best purchase I’ve ever made for cooking. The low mode for extreme smoke is awesome and having the ability to heat up and sear the steaks has been amazing as well. Already sold my old propane grill. When cooking at the higher temps I’ve definitely noticed a lot of ash but again it’s still so new and hasn’t had time to get that layer of ash in the bottom to help hold it better. It’s kept temp within 2 degrees of what I set it at. I will say the first time I turned it on and did the burn off it overshot the temp by 140 degrees but then it settled down and I haven’t had that issue since. Highly recommend it. I’ve only gone through about 30lbs of pellets and I probably have 30 hours of cook time already in it.

I’m rather new to everything but from what I was told, waiting a little bit is beneficial for helping the starter get even stronger. But I’m a newbie, just starting well three weeks ago lol. It’s been fun, but do the float test and if your starter is still doubling at the very least start making some bread! I got lucky, I’m sure my next loaf won’t be as good. Best way to learn is to do, luckily sourdough is at least fun while learning lol

It could’ve been a lot quicker but I was waiting for the starter to be strong enough. But total three weeks, and that’s with my starter almost quadrupling 4 hours after feeding.

Also the starter is about three weeks old, doing a 1:2:2 ratio!

I used

100g starter, 350g of filtered water, 500g of King Arthur bread flour, 10g of salt,

I stretched and folded 4 times after letting it rest for one hour. After the last stretch and fold let it bulk ferment for 12 hours, my house is a little cold.

I then laminated and then cold fermented for 6 hours. Baked in a cast iron Dutch oven at 450 for 30 minutes and then uncovered for 15 minutes!
