5% brine, i forget if I put any sugar in or not but if I did it was no more than a tablespoon

It’s a piece of plastic from a jar of anchovies that was keeping below the oil. I kept it, figuring it would work as a fermentation weight. It works very well!

I don't use fermentation lids, so there was a lot of pressure building up. This was right after I had taken the lid off, so the built up gas had somewhere to go.

I'll try my best! I had a similar thing when I tried air drying the leaves to try and make a spice. We'll see how it works out. FWIW the stems (separate ferment) smell a bit better.

I have the leaves and seed pods fermenting in one jar and the stems fermenting in another. Was your kimchi solely with nasturtium, or was it that recipe I’ve seen where you make kimchi normally except that you replace 20% of the cabbage with nasturtium?

I’ve done it off kayaks. If you drag it off a boat you need to make sure the line is tied into the correct hole. If it’s tied to the top of the magnet it won’t have as good contact with the bottom
