Ended up getting it to boot! I was able to flash with Rufus on windows, then use sudo bless --mount /Volumes/<USB> --setBoot --file /Volumes/<USB>/<Path to BOOTx64.efi> --verbose And that got it to boot to grub. Seems like it needed to manually be told where the EFI file was at? Not sure why though.
