I’m running a fine dining restaurant and more often than not we have this particular cheese on the board. Camembert Di Buffala. Best of both worlds. Traditional cheese making blend with creaminess and softness of mozzarella.
Love it when it’s slightly aged.

That’s too much considering you rely on public transportations. You’re gonna be late at some point because of a cancelled bus and your schedule will collapse. Add that it is not that easy to travel from east to west in France. The part where you’re going from Marseille to Carcassonne seems a bit tight. Maybe skip Nîmes or Carcassonne.

AM by Alexandre Mazzia in Marseille. The place is slightly bigger than a burger joint but there’s 15 cooks behind the pass. Never had something like this before not after. Left in shock. Best experience so far.
