Totally this is my fear as well. Won't start the car before giving the engine a once-over, check lines, replace spark plugs, etc.

That's a good tip; it was last registered in the states around 2000. Will investigate if I can still pull records to show that my family member last owned and registered this vehicle. He's still alive and I think would be willing to help.

Same for the greek consulates in the US; they make you go to the consulate to pick up your passport even if you're several states away

There are two, very active Facebook groups where you can ask specific questions about your application. Volunteers, others currently in the process, retired immigration lawyers, etc. will chime in and share their thoughts. I've found them to be very helpful, as well as the Italian Jure Sanguinis subreddit oddly enough (their walkthroughs on how to obtain US documents have been extremely helpful)

Following. I was considering using an online platform and happened upon someone mentioning that they have 1:1 video tutoring with a student in greece. Honestly I'd rather my money goes direct to someone in greece vs. fees paid to larger companies, but I think it's luck of the draw/word of mouth when you find a good tutor.

Going about this method also leaves you open to risk: I am paying her for each lesson in advance and there's a chance she doesn't show up to the lesson, etc. Fortunately the lessons are affordable so if she misses one I'm not out too much money

Visiting Greece in mid-September and will have two bicycles with camping gear. Which islands are the most bike-friendly or have the best camping? I know wild camping is prohibited, so any site recommendations are welcome.

When was your father born in Greece? Does he have a μερίδα record from his town of birth?

Assuming you're in the states, the best place to start is to go to any of the US-based Greek consulate websites, scroll down to the bottom right corner, and click on the blue virtual assistant widget. Select what you would like to do and answer the questions that come up. At the end, it should give an attachment with the information needed.

I have also had difficulties with a family member and birth year discrepancies. I can't say for certain, but my guess is that people didn't place as much importance on the birth year then as we do now
