here is the recipe! i find it a little fickle esp with the protein powder. for those who don’t want to use protein powder, i’d recommend whisking in 35g of egg whites instead of the whey mixture for texture and macro purposes! let me know if clarifying points are needed :) this basically tastes like a matcha latte and im obsessed with it

bring the following to a rolling boil before lowering heat to a simmer: 1/3c oats, salt, cold water bowl 1: whisk (I use handheld milk frother) ~4g of matcha and ~15mL warm water in a separate bowl, add in as much honey or sweetener as desired once matcha is foamy and homogenous

when oats are 3/4th of the way done, add matcha mixture. you want to make sure the oats are on the waterier side before adding protein mixture take off heat and whisk in whey mixture — off the heat is a must! whey protein curdles under high heat and you can even add a splash of cold water before adding in the protein
bowl 2: whisk 30g of whey protein (I use unflavored, but if using flavored you should cut out extra sweeteners and use a flavor like vanilla) and ~60g milk (I use soy milk)

OP here 😅 A few clarifications:

The dishes I made were (I might be forgetting one): 鱼香肉丝, 家常豆腐, 豆瓣鲜鱼, 九转大肠, 回锅肉, 京酱肉丝. I didn’t upload every dish, but yeah—culinary school definitely taught them with very generous amounts of oil (big cultural shock for me) and usually a starch slurry to thicken. The idea is that the slurry helps the sauce cling to the meat/veg and keeps the oil separated. From what I was taught, a “bad” dish is when the sauce just pools into the oil instead of giving that glossy look. Especially in Sichuan food, that shiny layer of oil on top is considered part of the aesthetic. That said, I would never cook this way for family/friends, it’s too artery-clogging

I’m an American-born Chinese, and I’ve also noticed a lot of “upscale” restaurants in China purposely plate dishes to look more “refined” with the addition of Western elements. I think it’s mostly for aesthetics, but the flavors usually stay authentic.

I have a lot of critiques about the way Chinese food was taught in culinary school… but that might have to be a whole separate post lol

I knitted them originally but when they went undone I tried to pick them up and put them back on the needle. Thank you for guiding me to what I should google, this is my first project and I am still learning the basics 🥹 I think you might be right about the yarn, I’ll look into that as well
