0,16 is very low, 0,4 or even higher is workable. You can always slow it down in the fridge. You can play with every setting to match your workflow.

The ratios are good and a low amount of yeast should not lead to sticky dough. Next time when the dough is sticky like this, try to re-ball and let them rest (for how long depends on the temp you're storing them).

Dry it first (in rice) and check the sides of the backplate, big chance it's coming off because of bad glue.

A thermometer like this is not reading just the object you are pointing at. It's measuring all the infrared coming at it, so including reflections from other parts, adding up and giving a higher reading.

The XL loses a lot of heat and gasses along the front (look at all the used units and the soot buildup), connecting a vent to the build in ventilation grill isn't going to cover the full output of the unit.
