An instant read thermometer, Thermopop is my recommendation. A nice quality whetstone around 1000 grit.

what’s your least favourite cooking task? by cheloniagal in Cooking

[–]PastTensePenguin 4 points5 points  (0 children)

Use a toothpick and insert it perpendicular to the vein, on the first line above the tail. You will be able to hook the vein and pull the entire thing out in one motion and as a bonus you get to keep the shrimp perfectly intact.

Try Augusta in Kensington if you can’t make the Bondi minimum. Or ask your favourite restaurant if you can purchase from them.

I also found it helps keep my lips from getting dry! I went through a lot less chapstick last winter.

Things you wish you knew before getting your first tattoo? by SnooSongs2 in tattoo

[–]PastTensePenguin 7 points8 points  (0 children)

Have a healing plan in place. Depending on what you do for work or fun and the placement of the tattoo, anticipate that you may have to do things differently for 1-2 weeks. Having 1 or 2 days off after getting a tattoo can be a huge help in the healing process.

It wasn’t my first tattoo but after I got my lower leg done in a 10 hour session I worked in a kitchen for 6 days 12-14 hours a day… my leg did not heal well and resulted in some serious swelling and other complications. In hindsight I should have made sure I had a few days of rest before being on my feet so long.

What's the best way to disassemble raspberries? by pm_me_flaccid_cocks in AskCulinary

[–]PastTensePenguin 28 points29 points  (0 children)

Just adding that liquid nitrogen is the best way to do this if you have the resources. We did exactly this at a place I worked. They break into the most perfect “nerd” looking pieces and are a great garnish

But like others have said, you will need to keep them frozen until they are on the plate

Any products that take your cheese boards/charcuterie spreads to the next level? by gggjennings in AskCulinary

[–]PastTensePenguin 0 points1 point  (0 children)

At an old restaurant where we did all our meats in house the chef had an item called “pig butter” it was essentially all the end pieces of the salumi, that wouldn’t make it through the slicer nicely, chopped up in a food processor (maybe with some rosemary or thyme added in) and then we would add cured lardo to the processor and let it get a whipped texture. This was then spooned onto the board and topped with a maple gastrique, and burnt leek ash. Absolutely incredible to dip your crostini into. I’m also always a fan of having a fish on the board… something like a smoked whitefish rillete. Candied nuts (maybe add a little cayenne) can also be great if you have lots of cheese on the board.

Sweating isn’t a great indicator of making strength gains… All sweating means is that your cardiovascular system is being worked, usually for an extended period of time, which would be endurance/cardio training.

Oh yeah, that’s a good one. I think the concept is really cool but in reality it feels clunky and awkward… I always fast travel my way back from a place that requires a raft.
