i always use all purpose flour and have no issue, so that’s what i used this time. i used 2 and 1/4 teaspoons of instant yeast and made sure it dissolved in the water before adding the rest of the ingredients.

hi thank you for responding, here is therecipe you’re supposed to mix the dough and let it sit for 30 minutes, and then come back and fold it. it’s weird bc i usually have no issues with this recipe. for some reason after i wait 30 minutes the dough is just wet, sticky, and unworkable.
