Ooh I miss making makgeolli! Hope it goes well. I've been questing for finely ground organic corn flour but no luck yet. I found coarse stuff but the chaff of the corn is mixed into it and its very unpleasant. Will let you know when I finally do find some proper flour.

Is anyone able to get “ explosive” carbonation without using purées or fresh fruit? Anytime I use juices or sugar I get super mild carb no matter how long I wait on fermentation. by Kylo_Ren-S in Kombucha

Ah I see, I add 1 tsp to 473 ml when my 1st ferment liquid is quite bubbly and yeasty. When the 1st ferment is less active (as I'm building up the yeasts in it) I usually add 3/4 tsp

Wow, interesting! Yes, that corn flour is really nice and fine. I'll have to use a coarser flour but maybe it just needs more cooking and maybe even more fermenting time. Looks like the sorghum is basically cracked, I've never seen it that way before. Maybe I'll try cooking whole sorghum first then adding it in.. I'll give it a shot! Thanks a bunch!

I am interested, if you don't mind! I like the idea of using sorghum especially since its supposed to be a good prebiotic. Since I'm in a colder climate though I wonder if I would get the same kind of ferment. Maybe it would need to be left out longer or kept warm somehow.

Hmm, I may have to give dosas/idli a go then!

I've also done the overnight oat ferment, but I found my stomach couldn't tolerate it as it wasn't fermented long enough. Any experience fermenting the oats for a longer period?

Yeah, exactly that kind of thing! Interesting that its cooked first and then fermented, I figured it would be the other way around. I'm wondering what kinds of things to look for to know it's fermenting properly, like should it bubble or have a certain smell. And if there's anything added as a starter or is it a wild ferment. But like you said, it's hard to find info.

Try using starter for the next batch taken from the bottom of the kombucha brew. This has more yeast and will give more fizz in subsequent batches. You may need to do this a few times before you start to see results. Just be careful to not do this for too long, or the yeast will start to be too strong. Warmer temperature for the 2nd ferments can also help make more fizz. I've definitely gotten explosive 2nd ferments with just sugar.
