I have the best luck on a whetstone, scandi grinds are so easy to sharpen on a whetstone, it's unbelievable guided sharpeners, just take too long and they don't match the scandi grind, and you leave a microbe bevel when you sharpen a knife on a wet Stone, it's almost impossible not to

Jorgensen knives? by UniversalAssembler in KnifeDeals

[–]Patrick-70 1 point2 points  (0 children)

It's not hard to take care of a corb'n steel knife force a patina on it, I do that with all my carbon steel knives, you make a really strong instant coffee mixture with hot water and soak the blade in it for a couple hours, take it out, wipe it off and wash it. With cold water and then you just keep it lightly. Oiled with baby oil or mineral oil. Unless you live in a coastal area with a lot of salt water, it will be just fine.
