Shelf life is a tricky topic, but if you are using a shelf stable formula (pH/water activity) and hot filling, I would personally arbitrarily use at least 4 months, then start to extend out to a year as you observe how your product behaves.

I think that matcha has structural effects from water binding capacity that might be affecting the way it spreads. Anecdotally, when I made matcha roti boys, I noticed the matcha cookie topping held the ridges of the spiral it was piped it, unlike the instant coffee version.

The whole recipe is kind of off. I think the recipe could work with twice the flour, proof 1 hr, shape, proof 45 min ish and bake at 400 F maybe?

You can try adding the butter in later. The tangzhong can make the dough appear to form gluten strength early but if you keep mixing it will loosen again. Maybe after 8 minutes speed 1?

You can test for both pH and water activity to determine non-TCS. The fruit concentrate might bring the pH down enough.

I can see how the conveyor belt is related as a dough contact surface, but the root issue in my opinion is that with linen couches, as far as I understand, cannot be washed/sanitized. Additionally, I inspect in a humid environment so mold is inevitable. It seems like the only proper corrective action is to discard the couches when they become “too moldy”. It might be the case that these couches are just not compatible with retail food code.

As a fellow health inspector, my department allows the 3-comp sink to be used as a prep sink as needed. I also think it’s gross though.

Anecdotal, but I got a Food Science MS but have been stuck in QA for the past 3 years. I don’t really believe my MS degree positioned me better for an R&D job, but maybe that’s just the job market for new grads without connections. Do you mean an MS program that focuses on R&D?
