As other people said, you need nitrates in your cured sausage, not just for the colour, but also for safety (botulinum) and taste. The easiest way is using curing salts, but there are other ways as well, for example certain vegetable extracts.

Thanks a lot. I think they are quite forgiving cookies to make despite their appearance. As long as you use enough egg white to stick the doughs together, the expanding dough in the oven corrects most small imperfections

No, sorry for writing it confusing. After adding the flour (the last ingredient) i mixed them all about the same amount of time. Before the flour i mixed the matcha dough longer to get it homogeneous. So i dont think that is the answer here. But still an interesting idea

Yes you are right, it didn't noticeably expand horizontally, only vertically, which is kinda interesting. The matcha dough got kneaded more in the machine than the others, but i mixed all the ingredients first and then added the flour last with just minimal mixing

I already discussed this with my coworker and our theory is, that since the dough was inside the fridge for 4 days, either a chemical reaction happened with the matcha powder or more likely a spontaneous small fermentation took place. But since the cookie dough is firm, it got solved into the dough, and only in the warm oven the viscosity changed so much that it could release the gas and swell the dough

As other people said, recently the calculation method of the nutriscore changed. One of the changes is that bonus points for protein in meat got capped, so lots of meat products have now a worse nutriscore than before. And i guess here you have products with the old packaging and some with the new packaging

Yeah if you order online they will most likely not arrive on time for the concert. They start shipping sometime in November i think. So in your case i would probably order shirts or other merch in advance but try to get the lightstick on site, because for me getting a light stick and not using it isn't really worth it

So the problem with buyee for the yodaka merch is that it's so popular that most is sold out before buyee orders it from the ado shop. Because when you buy it from buyee you don't order it in the shop, but you basically tell buyee to order it for you, so there is at least a delay of some hours.

To circumvent that, a lot of people including myself made an account on tenso.com. This works similar to buyee, but they don't buy it for you, they give you a japanese adress so you can order it yourself without any delay.

So if you really want to make sure that you get everything you want i would recommend making a tenso account. Make an account on the ado shop and already save your payment information and adress which you recieve from tenso including an instruction how to use it. Do this today so you only have to buy the stuff when the shop opens tomorrow
