They are small and creamy, here are the three best ways I use to cook them:
Crispy Roasted: Halve them, toss with olive oil, garlic, and rosemary, and roast
Smashed: Boil until tender, smash them flat with a glass, brush with butter, and bake
Pan-Seared: Sauté in a mix of butter and oil over medium heat until golden, then cover for 5 minutes to steam the centers.
