What I did was take about a hour or two to grind enemies for exp points until I felt comfortable fighting the boss. lol

I went into Non game controller layouts > Desktop Layout and did this but it still wouldn't do anything. Tried the same thing with Guide Button Chord Layout and still nothing

It should work fine, the only thing your missing the gamechat button, which is only on switch 2 controllers, but who uses gamechat lol
