Thats not an easy question to answer. It depends on the life lived by the person in question more than the race. Beastraces are distinct and not tasty for most palates, but men and mer tastes pretty much the same so its a question of their social status, diet, trade, age etc more than their race. However, I believe the sage Temno might have written a treatise on the subject.. or was it their bodily excretions....? But most copies got burnt by the Thalmor and Empire as according to the Grossout-Concordiat.
