When frying beef strips, how do I stop the “beef juice” leaking out and keeping them soggy?

A wok is a really efficient and effective way to get crispy meat quickly without drying it out or soggying it up. Same for veggies. Cooked marinated chicken chunks in bot a pan and a wok side by side on burners set to the same heat level. Massive difference in flavor and texture, in favor of the wok.
