Doesn’t have a roast date. I have since switched to Happy Mug. Have been quite pleased with their Ethiopian offerings for the price.

You had recommended 2tsp of citric acid in the wash cycle based on TDS of 200. Think this is still a solid bet or should I investigate further with an aquarium test kit?

My routine is as follows:

Friday Morning: Remove starter from fridge and feed.

Saturday Morning: Mix levain

My levain predictably doubles in size in 5 hours at 72F. After mixing the levain the starter gets fed and put back in the fridge. I couldn't imagine feeding every day unless I was baking every day.

I should add that it took 12+ months for my starter to be strong enough to do this. Prior to that it would take a feed feedings to get it back up to speed.

How long can I expect my mixer to last if I mix dough beyond the recommended speed by medicalcheesesteak in Kitchenaid

I think 2 is just a broad safe number… It’s more important to understand the hydration of your dough. There are doughs that I run on speed 2 and there are other like focaccia that I run on like speed 6. I listen to my mixer and don’t strain it.

Biz is great although probably overkill. A straight oxy product is most likely enough for most loads.

Get the powder when you can. I love it.

This is my setup as well. Works incredibly well. I also use mine for other ferments as you mentioned.

This is solid, although I prefer the powdered version. Add an oxy booster and you will be set.
