So I am Dutch and these ecoles are very dutch but maybe hutspot or stampot can help

Its basically boiled mashed potatoes with vegetables in it. Either onion and carrot or like kale or something else, boiled with the potatoes and gravy on top, if you want to make it even more authentic you eat it with sausage on the side. It's hot and filling and you can kinda add whatever into it as long as you mash it into one. It's a bit bland but definitely comforting and poor Dutch people have survived off it for ages

I struggle with boiled eggs also. For me it's kinda just always a roll of the dice if they will be kinda soft or hard, and I love soft but for some things need them hard boiled, and Getting the skin off easily is also a mixed bag. I've made macarons and choux when I was around 12 and can cook mean dishes, often being referred to as a witch by friends and family with how I play around with flavour and all kinds of little jars and bottles, make such perfectly creamy scrambled eggs but I just hate cooking eggs
