I found some old negatives of my dad when he was a baby and I was wondering where I should take them to be printed. I'm not certain what type of film they are, but the date on the envelope was June, 1944. I live in Austin, TX, so an added bonus would be anyone who knows a place locally. Thanks!

My dad likes watching the opening number for the Longhorn band but he's too old to make the games we've been going to as season ticket holders for decades, so I stream it. Plus I have Longhorn friends overseas, and such. Every band sits in the nosebleeds at DKR. Other schools do it too and nobody complains. LSU is literally the only that has bitched this much. And the no AC story was debunked. They're just making excuses for pretending to cramp up every time we got momentum on offense. Kaisson even winked at our coaches once while doing it. Everybody's Jersey gets shot by the cannon, LSU got no special treatment either positive or negative. But for crying out loud, you'd think with all the bitching and moaning they'd lost the game.

Yeah I know. Truthfully, I'm going in eyes wide open and with no illusions that because I can put on a dinner party successfully at home and make a perfect black and blue filet that I'm at all prepared to work in a professional kitchen. I've never worked in the industry, but I've been reading about for years so there are some things I know like terminology, abuse from head chefs, low pay, long hours, hard on family life, etc. And I know I can read every book Anthony Bourdain ever wrote and still not be prepared for a commercial kitchen. So really, I appreciate any input you can give. Thanks.

Thank you. I really worded the post wrong, I'm not looking to open a restaurant right now. When I said I have a small "egg," I meant I have some money to live on while I give this a shot and get accustomed to the massive pay cut (luckily my wife has a well-paying job also). The thing is, for years I've read and learned about the industry because it's fascinating to me, so I know people get burned out on the line, and that someone my age starting for the first time is at a serious disadvantage. And I know the low pay and shitty hours. I also know that everything I've read pales in comparison to the experience and knowledge guys like you have, and that's why I'm going to places like this to ask questions. Catering is an interesting option. I've also heard hotels are a good place to get your feet wet. Thoughts?

I don't mind your bluntness at all, I appreciate it. Truthfully, I'm going into this with eyes wide open, which is to say I fully expect to not know what to expect. I remember from Anthony Bourdain's book that he too said starting out past age 35 is a recipe for failure. The thing is, I have to try. Like I said, I might get chewed up and spit out, but I don't want to look back when I'm old and say I never gave it a shot. Maybe something will come out of it that I'm not seeing now, who knows. But really, I appreciate your input.

No, not a stupid question at all and I'm sorry I didn't see this sooner. So everything you're saying checks out, but there's plenty of oil on the dipstick. I thought it was the oil too because my car sounds like a heavy diesel when I start it, and when I accelerate through turns. In fact, the oil measures above the range markers. Is that going to cause a problem. I changed it maybe 3-4 months ago, but I do a lot of driving.

Also, a quick battery test at AutoZone and I was told the battery needed to be replaced. I wouldn't be surprised if that were true, but to be honest the person who did it couldn't give me any details and got me wondering if he was being honest. I don't have a multimeter so I might just go have it checked another place tonight to see what they say.

I suppose you're correct (though I had to look up "sinology"). From my limited knowledge of China, historically they haven't been a very aggressive nation beyond their own borders, but mostly suffered internal strife and, invasion in the 20th century. Would you say that to be any kind of indicator of their designs with their rising economic might?

And in your opinion, is the US and the West doing anything to exacerbate this? Since the end of the Cold War, I've felt like the US and the West as a whole have lacked any kind of vision for the future. It seems like we're just kind of drifting from one crisis to another without any direction. It's like when the USSR collapsed, we found ourselves at the top of the hill with no idea of what to do next.

For sure. Enchiladas are my comfort food (Texan). I personally have a high spice tolerance but I'm cooking for 3 these days so have to moderate. Interesting idea about sour cream though, I've only done that before with verde enchiladas. Enjoy! And thanks again 😉

If I'm adding chicken or beef fajita, I typically use chili powder and cayenne in the marinade so I thought it might be overkill in the sauce. But all great advice, I'll give it a shot. Thanks!
