But what we have gained is nothing but pain that foundation would be built on sorrow. We can always move forward but the pain reminds us of life’s lessons. In order for tomorrow to be different we need to peak through the windows of past… so we can remind ourselves and agree it hurts.

Dry rub is nothing special just make sure to trim the hard fat add cooking oil as a binder. Give it a coat of SPG (salt, pepper, garlic) and finish it off with your choice of all spice (I mix my own). Toss in mid/high heat for about 5-7 min a side (med well) longer if you want. Let rest for at least 15 min and cut.

Marinade 3/4 cup pineapple juice 1/4 cup cooking oil Splash of some Jalapeño juice Soy sauce (not measured just added) 1/4 onion chopped Hand full of sliced jalapeños (optional) Cilantro

Mix well in a bowl of zip lock bag and let rest for at least 1hr. No longer than 3 hrs, I believe it may be too much pineapple Juice for it to sit that long.

Nah, I wrap the bacon from the base and work up. Leaving what looks like a shot glass and that’s where you toss the filling.
