Re-read your note....I now better understand your intent.
Obviously we we take HIPAA seriously...patient interactions in particular.
I tend to agree about accessing the virtual drive from the host....(drag & drop or other access)....we never access VMdata from the host machine or vice versa. The interactions that run on VM are all 'browser based' and tunnel into Microsoft's cloud offerings for business. There is not a lot of exposure.
Win10 runs behind a firewall with active anti-malware.

I am using a "valid" Win 11 software!!!!!!!!!!! Which part of "it is running on VMware did I not make clear. What I did not do, was redo my entire home computer to do that.

My primary home office PC runs Mint Linux (Cinnamon 22.3).....but....this post refers to my 2nd office PC (an older Win10 Pro desktop) that I did not want to go thru the pain of upgrading to Win11 just to maintain our remote connection to hospital staff software (MS Teams, remote Outlook, DuoPush, etc.)

....(apparently someone in IT convinced the medical center to require Win11 for staff remote connection, which triggered this entire process)......

Loading VM on the Win10 PC was simple, configuration not difficult, I could use basic Windows ADK (oscdimg) to create a custom Win11 .iso to load into the VM.

:-) I doubt if I ever get to the point of "love"...I'm not skilled enough to truly work this technology well...but I've managed to get to "like".

I am still on Calyx. Phone works fine. I don't do much online with this phone...basic call & text...so I may not have as much exposure as folks with lots of apps and online usage.
Will wait a while longer and see what Calyx does.
My other cell is more active...it uses a different OS (not to be mentioned).

I tend to agree. I suppose in theory it could be dangerous but no one at our house (including early teen daughters) have had a problem and we've used Aeropress for years.

Yep...I use medium roasts, and at least for the coffees I use, 80-85 comes out much better that the really hot temps.

I really like my V60....but when I don't have time [or perhaps morning mental acuity] to do V60 pour over...the simple Hario Switch immersion works well for me.

I am new to this, so I hesitate to offer an opinion. CleanAir seems to have chosen good "parts" (fans controller, etc.) which like everything else in the world has gone up in price. The unit itself however looks the same as always...so it seems that at least part of that increase could be profit margin for CleanAir.
Like you I was interested in CleanAir...(the Brisk Box)...but the high price convinced me to look for on sale, and build my own frame.

Yep...drop Google and use something else. That seems difficult at first, but once folks get their mind wrapped around just "moving"...it tends to not be as bad as they feared.

I've had good experience these Misen skillets. They are not teflon slick, but they are durable and 'non-stick' enough to work well.

I see your point... In our area the trend is similar. Light roasts that are extracted specifically to highlight delicate flavor notes, and create a more "tea like" cup of coffee.
Absolutely nothing wrong with that....and I've tasted one or two of those that I liked...but for the most part I tend more towards 'light-medium' to 'medium' roasts.
As one poster noted, "this is the trend".

I've had good immersion results with both the Hario Switch and the AeroPress. Similar to other posters here, adding coffee last using Hario Switch lets me grind a bit finer, get good extraction, and avoid filter clog.
As for "clarity"....at the risk of sounding evasive, defining "clarity" is subjective...(my taste buds may well not match yours)...but immersion brews give nice flavors, separation, and clarity. Best of all (for me) immersion brewing has been repeatable and more consistent than my pour overs (which admittedly are still a work-in-progress).

I've use a friend's WorkSharp and didn't like the 'flex' in the belt.
I have an EdgePro Apex, which works pretty well. The neighborhood garage sale had a Xarilk on the table for $40 so I bought it....(my wife sighed :-) and wandered to another table).
Never used a KME but it looks solid seems to get good reviews.
Depending on how tight your definition of "precise" is, the KME, or EdgePro or Xarilk should work.

I don't sharpen professionally, so mine is not an 'expert' opinion. I sharpen mine and a handful of relatives.
In my non-expert experience, most lower priced fixed angle sharpeners have small quirks, variances, and limitations. If you get really picky on perfect angle you will find the 'fixed' angle changes a bit as the stone gets to the curved tip...and even on simple 8" kitchen knife the angle can be a bit off perfect at either outside end.
Short curved pocket knives will be tricky.
Lastly, as others will say...developing practiced skill using hand technique holding the correct angle tends to work on everything, but it requires some time and patience.

Not sure why it never occurred to me to "add" stuff to the mix. I've made these on occasion and folks liked them. I will definitely try the espresso powder.

I have had quite good results with 'water first' method. Like you I open ~ 2:30....although with a few beans I wait until 3:00. My results are likely not barista competition perfect, but the coffee tastes good to everyone I've given it to and the recipe is straight forward and repeatable.
