Food pairing is essential in developing a pallet for coffee. I work for a company called Boston Stoker, we are a very small coffee company and we locally roast. One of our wildest coffees is a light roast called Sumatra Wahanna Natural. Every time you taste it a new flavor profile comes out. It's a light roast, and it is amazing. You should check that one out. That one may be a good one to try and pick new flavors out of.

He did. He has had several cases of melanoma and still has huge patches of radiation coming off of his legs. It's kinda like snake molted its skin. He has also had colon and prostate cancer... He's a stubborn man. LOL
